AUNT MARGARET'S GLAZED PINEAPPLE
FINGERS
 
2 c. flour
3 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
1/4 c. shortening
1 egg
1/4 c. pineapple juice
1 c. drained, crushed pineapple

Sift together flour, baking powder, salt and sugar. Cut in shortening until mixture is crumbly. Beat egg and add pineapple juice. Add to flour mixture. Add crushed pineapple. Stir only until flour is well moistened. Using 2 forks, drop batter on greased baking sheet, shaping the batter into long narrow bars. Press sides smooth. Bake in hot oven at 425 degrees for 15 minutes. Frost with Lemon Icing. About 20 fingers.

LEMON ICING:

1/2 c. confectioners' sugar
1 tbsp. hot milk
1/4 tsp. lemon extract

Mix together until smooth.
