DUTCH POTATO SALAD 
1 1/2 lbs. potatoes, boiled, peeled and sliced
1 med. onion
8 strips bacon, cut in pieces
1/2 c. water
1/2 c. vinegar
1 tsp. sugar
1 tsp. salt
Dash of pepper

Boil, peel and slice potatoes. Fry bacon and cut into pieces. In bacon grease, fry onions until clear. Add water, vinegar, sugar, salt and pepper. Bring to a boil and put over sliced potatoes. Put bacon pieces on top and onion and sprinkle with parsley. Serve warm.
