HOT CHICKEN SALAD 
4 c. cooked chicken
2 c. chopped celery
1 c. chopped cashew nuts
2 tsp. chopped onion
1 tsp. salt
1 tsp. lemon juice
1 1/3 c. mayonnaise mixed with 2/3 c. milk
1 c. grated Parmesan cheese
2 c. crushed potato chips

Cook and cut up chicken (I use chicken breasts). Put chicken and all other ingredients into large casserole, mixing well with mayonnaise mixture. Crush potato chips and mix with Parmesan cheese. Add half of this mixture to casserole. Save remainder for top. Bake at 350 degrees for no more than half hour. Can be made at least a day ahead, saving top garnish until ready to bake.
