MARINATED CUCUMBER SALAD 
3 cucumbers, peeled and thinly sliced
1 large onion, cut into rings or 2-inch pieces
1 c. vinegar
3/4 c. sugar
2 1/2 tbsp. vegetable oil
1 tsp. celery seed
3/4 to 1 tsp. salt
1/4 tsp. pepper

Cook vinegar, sugar, and oil until sugar is dissolved. Cool.

Soak cucumbers and onion in cold water at least 1 hour. Drain. Add celery seed, salt, and pepper to cucumbers. Add onions. Pour vinegar mixture over cucumbers and onions. Chill. Can be made ahead of serving time.
