STEAM CHICKEN & POTATOES 
4-5 lb. chicken
5-6 potatoes
1 onion, diced
1 tomato, sliced
Italian seasoning
Salt, pepper, parsley & basil leaves
butter

In a roasting pan bottom, layer cut up chicken and potatoes. Sprinkle seasonings over top. Top with onion and tomato; dot with butter. Add a little more than 1/2 cup of water. Cover and cook about 1 1/2 hours. Oven 350 degrees.
