CUCUMBER YOGURT 
1 lb. fresh, firm cucumbers
1 tbsp. salt
1 tbsp. shredded parsley
1/8 tsp. garlic powder
1/4 tsp. cayenne pepper
2 tbsp. lemon juice
1 pt. yogurt or sour cream

Pare cucumbers; cut in bite size chunks. Sprinkle with salt; allow to stand 1 hour. Combine rest of ingredients. Drain cucumbers; stir into yogurt mixture and serve.
