HOT HAM ON THE HALF SHELL 
1 1/2 c. thinly sliced celery
2 tbsp. chopped onion
1 can Hormel chunk ham or leftover ham (or chicken, turkey or Spam)
1/2 c. frozen peas, thawed
1 tbsp. sliced pimentos
1/2 c. grated cheese (cheddar)
3 tbsp. French dressing

Place half shells of large avocados in hot proof serving dish. Saute 1/2 cup thinly sliced celery and 2 tablespoons finely chopped onion in 1 tablespoon butter (or vegetable oil until tender). Add ham or chicken or turkey and peas and pimentos. Stir over medium heat until warm, about 2 minutes.

Add 3 tablespoons French dressing. Stir until serving temperature. Season with 1/2 teaspoon green pepper to taste. Mound this filling into avocado shells and top with grated cheese. Broil 3 to 4 inches from heat for 2 minutes or until cheese melts. Serve immediately with any leftover vegetables and nut bread. (No salad need.) Enjoy!
