HOT HAM 'N' CHEESE SANDWICH 
1 recipe biscuit dough, divided
8 oz. thin sliced ham or smoked turkey
8 oz. thin sliced Monterey Jack or other white cheese
14 oz. Ricotta cheese or blended cottage cheese
1/4 c. Parmesan cheese
1 egg
3 tbsp. fresh herbs of choice or 1 tbsp. dried parsley

Lightly oil 9 x 12 x 3 inch pan. Preheat oven to 400 degrees. Make biscuit dough and divide in 2 balls. (Use your own recipe or 2 cups self rising flour, 1/4 cup oil, 2/3 cup milk.) Roll one half thin enough to cover pan. Place ham slices over this. Drain Ricotta and mix with next 3 ingredients; spread over ham. Cover this with white cheese slices. Roll out other dough and cover cheese. Sprinkle Parmesan cheese lightly and bake for 25 minutes or until brown. Cut into squares. Serve warm. Good at breakfast, brunch or tea!
