CHOCOLATE ANGEL FOOD CAKE | |
12 egg whites 1/4 tsp. salt 1 1/2 tsp. cream of tartar 1 1/4 c. sugar, divided 1 c. sifted cake flour 1/4 c. cocoa 1/2 tsp. almond extract 1 tsp. vanilla extract Beat egg whites (at room temperature) and salt until foamy. Add cream of tartar; beat until soft peaks form. Add 1 cup sugar, 2 tablespoons at a time, and beat until stiff peaks form. Sift remaining 1/4 cup sugar, flour, and cocoa together; gently fold into egg whites. Add flavoring. Spoon batter into an ungreased 10-inch tube pan. Bake at 375 degrees for 30-35 minutes. Invert cake; let cool completely. Remove cake from pan. Yield: 12 servings. 132 calories, 4.1 grams protein, 0.3 gram fat, 28.2 grams carbohydrate, 0 milligrams cholesterol, 125 milligrams sodium, and 11 milligrams calcium per slice. |
