SWEET ONION QUICHE 
8 inch pie shell (partially baked)
4 lg. SWEET onions, chopped
3 tbsp. butter
1 tbsp. oil
1/4 c. flour
2 whole eggs
1/4 pt. cream
1/4 tsp. salt
1/8 tsp. pepper
Pinch of nutmeg
1 c. Swiss cheese grated

Preheat oven to 375 degrees.

Saute onions in butter and oil over low heat until golden yellow (15 to 20 minutes). Sprinkle flour over onion and cook 2 to 3 minutes. Cool slightly. Beat eggs, cream, salt, pepper and nutmeg. Stir in 1/2 of cheese. Pour into shell. Sprinkle remaining cheese and 1 tablespoon butter (that has been cut into pea-sized dots). Bake 25 to 30 minutes until puffed and brown.
