1/3 cup butter
1 cup sugar
1 tsp. coconut extract
1 egg
1 1/3 cups Bisquick
1 cup potato flakes

Cream together butter, sugar and extract. Add egg and beat. Stir in Bisquick and potato flakes. Drop by spoonfuls onto ungreased baking sheet.

Bake at 350°F for 8 to 10 minutes, until edges are just beginning to brown. Place these cookies far apart on the cookie sheet because they spread and flatten out quite a bit.

Makes about 2 dozen cookies.
