BUTTER CRISP COOKIES 
1 c. softened butter
1 c. sugar
1 c. firmly packed brown sugar
1 tsp. vanilla
1 egg
1/2 tsp. salt
1 tsp. baking soda
2 c. flour
1 c. potato flakes
1 c. flaked coconut

Place all ingredients together and mix well. Place 1 inch balls on ungreased cookie sheet, flatten with bottom of glass dipped in sugar. Bake at 375 degrees for 6-8 minutes. 5 dozen.
