CHICKEN, TURKEY OR BEEF
CROQUETTES
 
2 c. thick white sauce
2 c. finely chopped cooked meat
1 tbsp. minced onion
1 tsp. snipped parsley
Salt
Pepper
1 egg
2 tbsp. water
Bread crumbs
Oil
8 oz. frozen green peas
1 tsp. minced onion

Prepare thick white sauce. Stir 2 cups ground or finely chopped cooked meat into 1 cup white sauce. Add 1 tablespoon minced onion and parsley. Season with desired salt and pepper. Spread mixture in ungreased square pan. Cover and chill 2-3 hours. Divide mixture into 12 equal parts; shape each into a ball.

Beat 1 egg and 2 tablespoons water until blended. Dip each ball into egg mixture; then roll in bread crumbs until completely coated. Cover croquettes and chill at least 2 hours.

Heat fat or oil (3-4 inches deep) to 365 degrees in deep fat fryer or pot. Fry croquettes in hot fat until light brown. (Handle croquettes carefully so crust is not punctured.) Drain; keep warm in 350 degree oven until serving time. Prepare frozen peas as directed; drain; add 1 teaspoon minced onion and 1 cup sauce. Serve over croquettes.
