BROCCOLI CORNBREAD 
1/2 c. butter, melted
1/3 c. chopped onion
1 tsp. salt
3/4 c. cottage cheese
1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained
4 eggs, lightly beaten
1 (8 1/2 oz.) pkg. corn muffin mix

In a bowl, combine butter, onion, salt, cottage cheese, broccoli and eggs; blend. Stir in muffin mix. Pour into a greased 13 x 9 x 2-inch baking pan.

Bake at 400°F for 20 to 25 minutes. Cut into squares.

Makes 12 servings.
