“SHERRY'S PORK KABOBS & PEANUT SAUCE” IS IN:

SHERRY'S PORK KABOBS & PEANUT
SAUCE
 
1 lb pork loin, cut into 1/2-inch thick slices
3 tsp. reduced-sodium soy sauce
2 tsp. Thai seasoning
8 green onions, chopped
1/2 cup all-purpose flour
1/2 tsp baking powder
1 egg, lightly beaten
1/4 cup reduced-fat creamy peanut butter
1 tbsp honey. 1 carrot, shredded

Heat broiler. Thread pork on 8 skewers, brush w/ 1 tsp soy sauce, and a sprinkling of Thai seasoning. Broil 3-4 inches from heat for 8 minutes, turning once.

ONION CAKES:

In a large bowl, combine onions, flour, baking powder, 1/2 cup water, egg, and 1 teaspoon of Thai seasoning. In a large skillet, heat 2 teaspoons canola oil over medium-high heat. Spread batter in pan.

Cook 10-12 minutes, turning once. Cut into wedges.

FOR SAUCE:

In microwave-safe bowl, combine peanut butter, honey, remaining soy sauce, and 1/3 cup water. Cook on high for 30 seconds. Whisk, cook 15 seconds more. Serve kabobs w/ onion cakes, sauce, and carrots.

Absolutely delicious!!!!

Made this tonight. Pork was tender and flavorful. Loved the onion bread with this and was able to make it on the sideburner of the grill while I grilled the kabobs so this is great for entertaining without having to run in and out of the kitchen. I used onion and green pepper chopped in my food processor, added some powdered garlic too. Yummy!
