CHICKEN MANICOTTI 
1 box manicotti shells
1 lg. chicken, cooked & boned
2 (3 oz.) pkg. cream cheese with chives
2 1/2 c. Jack cheese
2 c. Longhorn cheese (yellow)
1/2 c. celery
1/2 tsp. salt
1/8 tsp. pepper
1 clove garlic
1 med. onion
2 cans salsa (mild)
3/4 tsp. oregano
1 tbsp. oil
1/2 c. boiling water

Serves 10. Cook shells as directed. Combine chicken, cream cheese, 1/2 of cheese, salt, pepper; mix well. Stuff shells (place in 11"x14" pan or 9"x13". Preheat oven to 350 degrees. Saute onion and garlic in oil, add celery. Just soften. Add salsa and oregano. Pour over shells and sprinkle with rest of cheese. Add 1/2 cup boiling water over shells. Cover with foil and bake 30 minutes. Last 5 minutes, remove foil.
