CHICKEN MANICOTTI 
1 clove garlic, minced
1/4 tsp. oregano
1/4 tsp. marjoram
1/4 tsp. basil
Freshly ground pepper
Med. jar spaghetti sauce
4 oz. low-fat cottage cheese
2 oz. Mozzarella cheese, shredded
2 whole lg. chicken breasts or 4 halves, skinned, boned, and pounded to 1/4 inch thick

In a small bowl, combine garlic, oregano, marjoram, basil, and pepper with cottage cheese. Spoon 1 1/2 to 2 tablespoons of cheese mixture into the center of each breast. Roll breast jelly-roll fashion. Pour 1/3 jar of spaghetti sauce into the bottom of a 10 x 6 inch baking dish. Place chicken breasts on the sauce, seam side down. Pour remainder of sauce on top of breasts. Sprinkle with Mozzarella cheese. Bake at 350 degrees for 45 minutes or until chicken is tender.
