BEEF BURGUNDY 
6 slices bacon
4 lb. pot roast or round steak
2 cloves garlic
6 green onions
2 bay leaves
2 tbsp. parsley
1 tsp. thyme
1/8 tsp. pepper
1/2 c. butter
1/2 c. flour
1 can beef broth
1 1/2 c. burgundy
2 tbsp. lemon juice

Cut bacon into small pieces, fry, remove bacon and saute beef which has been cut into strips. Add garlic, onions, seasonings and bacon.

Melt butter, stir in flour until smooth, gradually stir in beef broth, wine and lemon juice. Put all together and simmer at least 2 hours. Add fresh mushrooms several minutes before serving. Serve over rice or noodles. Serves 8-12.
