MEXICALI RICE 
1 lb. ground beef
1 (13 3/4 oz.) can chicken broth
1 (8 oz.) can tomato sauce
1 pkg. chili seasoning mix
1 1/2 c. instant rice, dry
1 sm. green pepper, cut into sm. pieces
4 c. shredded lettuce
1 med. tomato, cut into pieces
1 c. sour cream
3/4 c. shredded cheddar cheese

Brown ground beef in skillet; drain. Add chicken broth, tomato sauce and chili seasoning mix; simmer 5 minutes. Stir in rice and green peppers; cover. Remove from heat and let stand 5 minutes, fluff with fork. Serve in dish with lettuce, tomato, sour cream and cheddar cheese over top. Green onions (optional). Makes 4 servings, may be doubled.
