PINEAPPLE CHICKEN 
2 lbs. boneless chicken
2 to 4 tbsp. oil
2 tbsp. cornstarch
1/2 c. sugar
1/2 c. vinegar
2 tsp. soy sauce
1/4 tsp. salt
2 green peppers
1 can (large) chunk pineapple
1/2 c. chopped onion

Combine cornstarch, sugar, vinegar, soy sauce and salt. Cook and stir until clear and thick. Cut meat in cubes and fry in oil until brown. Add chicken to sauce, add peppers, pineapple and juice and onions. Simmer 30 minutes serve with rice or noodles.
