PINEAPPLE CHICKEN 
2 lg. boneless chicken breasts
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1 (No. 2) can pineapple chunks
3 tbsp. oil
2 tbsp. soy sauce
1 tbsp. cornstarch
1 tsp. vinegar

Cut the boneless chicken into 1 inch strips. Toss with a mixture of the salt, pepper, and flour. Drain the pineapple, reserving 1/2 cup of juice. Heat the oil in a skillet and saute the chicken 5 minutes. Mix together the soy sauce, cornstarch, vinegar, and reserved pineapple juice. Stir until thickened. Serves 4. Good with rice.
