EASY PINEAPPLE PORK 
1 1/2 lbs. pork, cut into 1/2" x 1/4" strips
2 tbsp. oil
1/4 c. water
1/2 tsp. salt
1 (10 oz.) jar pineapple or apricot preserves
2 tbsp. vinegar
1 tbsp. soy sauce
1 tbsp. cornstarch
1/4 c. thin onion slices
1 (6 oz.) pkg. frozen Chinese pea pods, thawed
Hot cooked ramen noodles or rice

Brown meat in oil; add water and salt. Cover; simmer 5 minutes or until tender. Add combined preserves, vinegar, soy sauce and cornstarch; mix lightly. Add onion; cook over low heat 5 minutes. Stir in pea pods; heat thoroughly. Serve over noodles. Makes 4 to 6 servings.
