HOLIDAY FUDGE - WHITE 
4 c. sugar
2 c. milk
1/2 c. butter
1/3 c. chopped candied cherries
1/4 tsp. salt
1 tsp. vanilla
1/4 tsp. almond extract
1/3 c. chopped pecans

In a large, heavy saucepan, combine sugar, milk, butter, and salt. Cook over medium heat, stirring frequently until sugar dissolves. Cook over low heat to soft ball stage (238 degrees), stirring often. Remove from heat. Cool to room temperature, without stirring, to lukewarm. Add flavorings; heat vigorously until fudge becomes thick and loses its gloss. Stir in nuts and cherries, spread in greased 8"x8" square pan. When firm, cut into squares.
