FRESH APPLE FRITTERS 
1 c. milk
1/2 c. sugar
1/2 tsp. salt
1 egg (beaten)
Juice and rind (grated) from one orange
4 tbsp. butter (melted)
1 c. apple chunks (skins may be left on)
3 c. flour
2 tsp. baking powder
1 tsp. vanilla or black walnut flavoring

In a mixing bowl combine the milk, egg, sugar and melted butter; add the orange juice, grated rind, apple chunks, and vanilla or walnut flavoring. Sift together the flour, salt, baking powder. Stir this into the milk mixture with a spoon until blended. Do not overmix.

Preheat oil in a skillet to 350 degrees. Drop batter off end of a tablespoon into hot oil. Fry to a golden brown; turn so they brown even. Allow to cool. Roll in powdered sugar. Serve with salads or eat as a dessert.
