FORTY NINER BEANS | |
1 lb. dry beans (pinto or pink beans are best) 1/2 lb. salt pork, cut into 1" cubes 1/4 c. molasses or brown sugar 1/2 tsp. salt 1/2 tsp. pepper 1 sm. onion, chopped (opt.) Soak the dry beans overnight in water. Put the salt pork in a large pan and cover with water and bring to a boil. Remove from heat and pour the water off. Add some more water and simmer until the salt pork is somewhat soft. Add remaining ingredients and cook until the beans are soft. |
