NONA'S BAKED BEANS 
2 lb. pink beans
1/2 lb. bacon
1 lg. chopped onion
Ham, cubed
5 or 6 cloves garlic
1 lb. lean ground meat
Plenty of salt and pepper
2 tbsp. prepared mustard
1 can tomato paste
3 - 4 pepper oncini
Ham bone or 2 ham hocks

Cover beans (which have been rinsed) with plenty of water in a large pot. Bring to boil and simmer. Fry next 5 ingredients well, until WELL browned. Skim off any fat and add to beans. Add ham bone and rind if available. Add salt and pepper to taste, mustard, tomato paste and pepper oncini. Cook until beans are tender (4 or 5 hours), adding water when necessary. May add 3 tablespoons brown sugar. Add salt to taste.
