OVEN STEW 
2 lbs. beef chuck, cut into 2" cubes
1 onion, quartered
4 carrots, quartered
4 celery stalks, quartered
1 tsp. salt
1/4 tsp. pepper
1/2 green pepper, chopped
1/4 c. quick cooking tapioca
1 lb. fresh mushrooms, sliced
1 (12 oz.) can tomatoes
3/4 c. dry red wine

Combine all ingredients in a large Dutch oven and cover. Cook in 300 degree oven for 4 hours. Do not uncover while cooking. Serve over noodles, rice or mashed potatoes. 6 servings.
