PINEAPPLE DROP COOKIES 
2 c. flour, sifted
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
2/3 c. shortening
1 1/4 c. brown sugar, firmly packed
2 eggs
3/4 c. crushed pineapple, drained
1 tsp. vanilla

Sift flour, add baking powder, soda and salt. Set aside. Cream shortening with sugar until light and fluffy. Add eggs one at a time, beating well after each. Add pineapple and vanilla. Stir in flour mixture a little at a time until smooth. Drop from teaspoon on ungreased baking sheet. Bake at 400 degrees 10 minutes or until done. Makes about 4 dozen cookies. When cool, ice with a powdered sugar icing.
