CRANBERRY - ORANGE RING 
2 c. cranberries
1 1/2 c. water
1/2 c. sugar
2 pkgs. strawberry gelatin
1 1/2 c. apple or cranberry juice
1 (8 oz.) pkg. cream cheese, softened
1 c. orange sections, diced
1/2 c. celery, diced
1/4 c. pecans, chopped

Combine cranberries, water and sugar, and simmer 5 minutes, stirring frequently, until berries are soft. Add Jell-O and juice, and stir until dissolved. Chill until slightly thickened. Measure out 1 cup and blend into cream cheese. Chill until slightly thick. Add oranges, celery and pecans to clear gelatin. Pour into mold. Chill until set, but not firm. Spoon creamy gelatin over clear gelatin and chill until firm. Unmold.
