BROCCOLI, CHEESE AND RICE
CASSEROLE
 
1 1/2 c. cooked rice
1 sm. onion, chopped
1/2 stick butter
1 box frozen broccoli, cooked as directed
2 cans cream of mushroom soup
1 lb. Velveeta cheese, cubed

Saute onion in butter. Stir in soup and cheese and cook until melted and well blended. Add broccoli and rice. Pour mixture into a baking dish and bake at 350 degrees for 20 to 30 minutes.
