POLISH POTATOES 
3 lg. potatoes, pared, cooked & sliced
1 onion, chopped
1/4 c. butter
2 eggs
1 c. dairy sour cream
1/4 c. milk
Salt & freshly ground pepper to taste
1/3 c. soft bread crumbs
1/4 c. grated Parmesan cheese

Heat oven to 400 degrees. Layer sliced potatoes in a greased baking dish. Saute onions in butter and add to potatoes. Beat eggs, sour cream and milk until well blended. Add salt and pepper. Pour over potatoes. Combine bread crumbs and cheese. Sprinkle over top. Bake 20 minutes or until top is browned. Serves 6.
