ZUCCHINI LASAGNA | |
3/4 lb. ground beef, salt to taste 1/2 c. chopped onion 15 oz. can tomato sauce 1/2 tsp. oregano 1/2 tsp. basil Salt and pepper 4 med. zucchini (8 inch) 8 oz. Ricotta or lg. curd cottage cheese 1 egg 1/2 lb. Mozzarella cheese, grated Parmesan cheese Preheat oven to 350 degrees. Cook beef and onion in large skillet - drain fat. Add tomato sauce and seasonings and cook 10 minutes or more, stirring occasionally. Slice zucchini lengthwise, about 1/4 inch thick. Arrange half the slices in 8 x 12 inch pan - salt lightly. Beat cottage cheese with egg. Spread on zucchini, and top with half of Mozzarella and sauce. Layer with remaining zucchini, Mozzarella, and sauce. Sprinkle generously with Parmesan cheese and bake, uncovered, 40 minutes. Let stand 10 minutes before serving. |
