ZUCCHINI LASAGNE FOR TWO 
2 zucchini, 1/2 lb.
1/2 c. ricotta cheese
1 tomato, sliced
1/4 c. finely chopped onion
2 tbsp. flour
1/4 tsp. salt
1/4 tsp. thyme, crumbled
1/4 tsp. basil, crumbled
1/2 c. grated Mozzarella cheese
1/4 c. grated Parmesan cheese

Slice zucchini into 1/8" slices. Place half in 2 (8"x8") individual baking dishes. Top with ricotta cheese and tomato slices.

Sprinkle each serving with 1 tablespoon flour, 1/8 teaspoon thyme and 1/8 teaspoon basil. Cover with remaining zucchini slices. Sprinkle with cheese. Bake in 350 degree oven for 30 minutes.
