BUTTERSCOTCH OATMEAL COOKIES 
1 1/2 stick unsalted butter
1/2 c. dark brown sugar
1 1/4 c. flour (all purpose or oat flour blend)
1 1/4 c. old-fashioned rolled oats
1/2 tsp. baking powder
1/2 tsp. baking soda

Cream together softened butter and sugar with electric mixer. Stir together flour, oats, baking powder and baking soda and add to butter mixture, blend well.

With floured hands, form balls the size of walnuts. Place on ungreased baking sheet and press fat with fork. Bake at 350 degrees for approximately 15 minutes or until golden.
