POPPY SEED MUFFINS 
1/2 c. butter, softened
3/4 c. sugar
2 eggs
3/4 c. sour cream
1 tsp. almond flavoring
1/2 tsp. vanilla flavoring
2 c. all-purpose flour
1/4 tsp. baking soda
1/2 tsp. salt
1/4 c. poppy seed

Cream butter, gradually add sugar, beating well at medium speed. Add eggs, one at a time, beating after each. Add sour cream and vanilla. Combine flour, salt, soda and poppy seeds; add to creamed mixture.

Spoon into greased muffin pans filling 2/3 full. Bake at 400 degrees for 20 minutes or until golden. Remove from pans immediately.

Makes 16 muffins. May bake in small muffin pans, 5-8 minutes.
