BRAN MUFFIN VARIATIONS 
2 c. pastry flour
1/2 tsp. salt
1 tbsp. baking powder
2 tbsp. sugar
7/8 c. milk
2 eggs, beaten
3 tbsp. oil

Grease muffin tins. Sift dry ingredients and make well in center. Combine milk, beaten eggs and oil and pour into well. Blend just to moisten. Do not over mix. Fill greased muffin tins 3/4 full and bake at 400 degrees.

VARIATIONS:

1. Substitute 1 1/2 cups graham flour for 2 cups all purpose flour.

2. Substitute 1 cup All Bran for 1/2 cup pastry flour.

3. Substitute 1 cup cornmeal for 1 cup pastry flour.

4. Add 2 tablespoons molasses instead of sugar.

5. Add 4 slices diced fried bacon instead of oil.

6. Add 1/4 cup grated cheese instead of fat.

7. Add 1/4 cup chopped dates, raisins or prunes.

8. Put preserved fruit in center of muffins before baking.

All variations are tasty, but muffins should be served warm.
