SWEET POTATO BREAD | |
4 eggs 3 c. sugar 3 1/2 c. flour 1 c. oil 2 tsp. baking soda 1 1/2 tsp. salt 1 tsp. nutmeg 1 tsp. cinnamon 2 c. or 16 oz. can sweet potatoes 1 1/2 c. pecans 1 1/2 c. raisins, optional 3/4 c. water or sweet potato juice Mix all ingredients together by hand. Spray 4 coffee cans (13 oz. size) with Pam cooking oil spray. Pour batter in cans until 1/2 full. Bake at 350 degrees for 1 hour and 15 minutes. Cool for 3 to 4 minutes then turn out. When completely cool put back in cans. Store with lids on. |
