MARY MYERS' SHORTBREAD 
3 c. sifted all-purpose flour
1 c. butter
1 c. confectioners' sugar

Heat oven to 350°F. Grease a 9-inch square pan.

Sift the flour, measure and sift again, right onto your bread board. Work the butter in a bowl until very soft, then gradually work in the confectioners' sugar.

Dump the sugar mixture on the flour and knead thoroughly until they are worked together well. Mixture will be very crumbly.

Put in pan and press down so it fills the pan. Bake 30 minutes or until a light brown only. When done, cut into squares. Then turn out on a rack and cool.

Makes 80 (1-inch) squares.
