MEXICAN CHICKEN CASSEROLE 
Stewed chicken breast
1 can ROTEL tomatoes
1 can cream of chicken soup
tortilla or dorito chips
Shredded cheddar cheese

I stew a couple of chicken breasts (or you can use store bought roasted chicken) so chicken is flavorful and tender.

Crush doritos and put layer in bottom of 9 X 13 baking dish. Tear chicken into small pieces and layer over chips. Heat soup and ROTEL together in a pan. Pour over chicken layer. Cover soup layer with shredded cheese. Cover cheese layer with more crushed dorito chips. Cover and bake at 350 for 45 minutes.
