BARBECUE CHICKEN | |
6 (3 oz.) chicken breasts, boned & skinned Vegetable cooking spray 1 med. onion, chopped 2 tbsp. vinegar 1/4 c. lemon juice 1 c. ketchup (low sodium) 3 tbsp. Worcestershire sauce 1/2 tbsp. mustard 1 c. water 1/2 c. parsley Dash of red pepper Saute chopped onion in skillet coated with vegetable cooking spray. Add remaining ingredients except chicken and simmer 30 minutes. Place chicken in single layer in a baking dish. Pour sauce over chicken. Cover baking dish with foil and bake at 325 degrees for 1 hour or until tender. Nutritional Analysis: Serving Size 1 breast with 1/6 of sauce. 175 calories; 72 mg cholesterol; 396 mg sodium; 500 mg potassium; 3.1 gm fat, 16% calories from fat, .7 gm polyunsaturated, .9 gm saturated. Diabetic Information: 1 serving may be exchanged for 3 ounces meat. Yield 6 servings. |
