BLUEBERRY BRAN MUFFINS 
2 cups 100% bran (I use Nabisco)
1 1/4 cups milk
4 tbsp. (1/2 stick) butter, melted
1 egg, slightly beaten
1 cup all-purpose flour
1/3 cup firmly packed light brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1 cup fresh or frozen blueberries

In a medium bowl, combine bran, milk, butter and egg; let stand for 5 minutes.

In a small bowl, combine flour, brown sugar, baking powder and baking soda; stir in bran mixture just until blended.

Note; Batter will be slightly lumpy.

Stir in blueberries. Spoon batter into 12 paper-lined or greased 2 1/2-inch muffin pan cups.

Bake at 400°F for 20 to 22 minutes or until done.

Serve warm and enjoy!

Makes 12 muffins.
