DELMONICO POTATOES 
9 potatoes
1/3 c. butter
1/3 c. flour
2 1/4 c. light cream
1/8 tsp. pepper
1 (4 oz.) pkg. shredded Cheddar (white) cheese, 1 c.
3 tbsp. dried bread crumbs
3 tbsp. grated cheese

Cook potatoes. Peel and dice. In large saucepan over medium heat melt butter. Stir in flour until well blended and smooth. Add cream and cook stirring constantly until thick and bubbling. Add pepper and 1/2 cup Cheddar cheese, then stir in diced potatoes.

Pour potato mixture into a greased 9 x 13 inch baking dish sprinkle with 1/2 cheese, grated cheese and bread crumbs. Bake 25 minutes at 325 degrees.

Serves 8-9.
