ESCALLOPED POTATOES DELMONICO 
2 tsp. oil or Pam
4-6 potatoes, peeled and very thinly sliced
2 beaten eggs
1/2 pt. heavy cream
2 tbsp. chopped fresh parsley (optional)
1/2 tsp. salt
1/2 c. grated Swiss or Parmigiano cheese
1/4 tsp. ground black pepper

Preheat oven to 350 degrees. Grease large Pyrex dish or baking pan with oil or spray with Pam. In mixing bowl, combine potatoes with eggs, cream, parsley, salt, cheese, and pepper until thoroughly coated. Place mixture in baking dish and bake for 50 minutes. Test to see if potatoes are tender and cook longer if needed.
