PEPPERONI STUFFING FOR CORNISH
HEN
 
4 oz. firmly chopped pepperoni
1/4 c. apple cider or juice
4 slices toasted raisin bread, cubed
1/4 tsp. salt
1/4 tsp. nutmeg
1 med. apple, chopped
2 tbsp. butter, melted

In a saucepan, simmer pepperoni in apple cider; 20 minutes, covered. Drain reserving 1 tablespoon of juice. In a bowl, combine bread crumbs, salt and nutmeg. Add pepperoni and apple. Sprinkle with reserved juice and melted butter. Toss lightly to mix.
