ROAST STUFFED CORNISH HENS COCO

2 rock cornish hens
Salt, pepper, thyme
1 clove garlic, crushed
1 c. mixed dried fruit
1 c. seasoned croutons
1/2 stick unsalted butter, melted
1/4 c. Coco Casa Cream of Coconut
1/2 c. frozen orange concentrate, undiluted

Wash and dry hens. Rub lightly with salt, pepper, thyme and garlic. Stuff and skewer. Brush with basting sauce and roast in preheated 400 degree oven, basting every 10 minutes. Roast hens for 1 to 1 1/2 hours or until tender when pierced with a fork. Spoon pan juices over hens before serving. Serves 4.

STUFFING: Cut fruit in small chunks and toss with croutons, butter and 1/4 cup cream of coconut.

BASTING SAUCE: Mix together orange concentrate and 1/2 cup cream of coconut.
