STUFFED MEAT LOAF WITH POTATO
TOPPING
 
2 c fresh bread crumbs
1/2 c. finely chopped onions
1/4 c. finely chopped green pepper
2 lbs. ground chuck
2 eggs, beaten
2 1/2 tsp. salt-pepper to taste
3/4 c. milk

Preheat oven to 350 degrees. Bake 50 minutes. Mix all ingredients well. Separate into (2) balls. Pat out each one. Fill bottom half with 1 1/2 Stove Top dressing. Cover other half loaf with 2 cups either packaged potatoes (this is 2 cups when mixed) or 2 cups homemade potatoes. Bank around complete loaf. put back in oven for a few minute. Heat - slice like a cake - serve with carrots or applesauce.
