MEXICAN CHILI CASSEROLE 
2 lb. ground beef
1 chopped onion
1 (10 oz.) can Ro-Tel tomatoes and hot peppers
2 (10 oz.) cans chili beans
1 can cream of mushroom soup
2 c. shredded cheddar cheese
1 pkg. corn chips, crushed
1 pkg. chili seasoning; optional

Brown ground beef and onions in large heavy skillet. Add chopped tomatoes, soup, beans, and chili seasoning. Simmer and heat thoroughly. In large greased casserole dish, layer corn chips, beef mixture and cheese, ending with a layer of chips on top. Cover and bake in 350 degree oven for 30 minutes or until bubbly. Serves 6.
