RECIPE COLLECTION
“PUMPKIN DUMP CAKE” IS IN:

PUMPKIN DUMP CAKE 
1 (29 oz.) can pumpkin
1 c. sugar
1 (13 oz.) can evaporated milk
3 eggs
4 tsp. pumpkin pie spices
1/2 tsp. salt
1 box yellow cake mix
1 1/2 cubes (3/4 c.) butter, melted
1 c. pecans, chopped

Combine pumpkin, sugar, evaporated milk, eggs, pumpkin pie spices and salt in mixing bowl. Beat well. Pour into greased and floured 9 x 13 inch glass pan. Sprinkle cake mix over pumpkin mixture, then sprinkle on the pecans. Pour melted butter over all.

Bake at 350°F for 50 to 60 minutes until knife inserted in center comes out clean. Watch closely at end. Burns easily.

Serves 12 to 15.

I was given this recipe by my Aunt many years ago. It has become a favorite "go to" when we want pumpkin pie, but I don't want to make pie crust. I've shared this recipe with many friends over the years. We call it Pumpkin Pie Cake.

I use a similar recipe but after cool I turn mine out on to a cake tray and frost with a cool whip/cream cheese mix. Yummy!

This recipe is also known as "Pumpkin Praline Dessert" and I think it was a BCrocker recipe. I never realized it was a dump cake at all, but when I made it last weekend I thought it seemed a little like a "dump cake" but it really isn't. I thought that dump cakes generally don't require the mixing of any ingredients, it was just dump it in the pan, spread it out and dump on the next layer! Anyway, it's very good and I'm glad I made it (though under the other name).

I have made this on several occasions but I also use a spice cake mix along with pecans or walnuts . But, after it has cooled a bit I drizzle caramel ice cream topping over it. Really really good stuff.

Try adding whip cream as soon as it comes it off the oven. Spread all over to of cake. It melts nicely almost carmalizing on top.

I too add the butter to the cake mix and mix till it is crumbly. I also put some cream cheese into the crumb mixture or add 8 oz. cream cheese to the pumpkin mixture.

We drizzle this with chocolate syrup. Decadent! I always mix the butter and cake mix and I too use unsalted butter. My husband once piled it over a brownie, put ice cream on top and of course I HAD to try it. Delicious!

I have had this multiple times and it is delicious! One piece of advice: Do not get in a hurry when baking it! Let it cook completely. I have had it under-baked and it has a funky texture. It's super tasty though, and much better than pumpkin pie in my opinion :)
