SQUASH CASSEROLE 
2 lb. squash, cooked and mashed
1 can mushroom soup
1 carton sour cream
1 carrot, grated
1 pkg. stuffing crumbs (save 1/2 to go on top)
1 onion, chopped

Mix all ingredients, place in greased casserole and top with stuffing crumbs. Bake at 350 degrees for 30 minutes.
