BLACK-EYED PEAS WITH SPINACH 
1 lb. dried or 1 can black-eyed peas
2 lg. onions
Salt and pepper
4-5 cloves garlic
1 lb. bag spinach
Vegetable oil
Lemon juice
4 c. water

Boil peas in water for 1/2 hour until tender. Saute onions and garlic. Add spinach (which has been washed and drained). Add all other ingredients. Add salt, pepper and lemon juice to taste.
